Hashbrown Casserole

French fries, thawed (30 ounces)
olive oil, 2 tablespoons
1 yellow onion, chopped 3 large cloves garlic, minced
One-quarter cup white flour
2 cups whole milk (or part-skim if you prefer)
one cup chicken broth
Sour cream, measuring one cup.
8 ounces strong cheddar cheese, shredded
1/4 cup chopped parsley (or substitute dried parsley if desired)
salt
fresh crackling black pepper
topping made with 1 cup shredded strong cheddar cheese

Grease a 9×13 baking pan and set the oven temperature to 350 degrees.
Place a medium-sized saucepan in the oven over medium heat.
