BECHAMELLE FOR LASAGNA

Ingredient:

4 tablespoons butter

4 tablespoons of flour

4 cups of milk

Salt to taste

White pepper to taste

A pinch of nutmeg (optional)

In a medium saucepan over medium heat, melt the butter.

Add the flour and stir continuously with a whisk for a few minutes to cook the flour, forming a paste called roux. Cook the roux until lightly browned, but do not let it burn.

Begin adding the milk gradually, about 1 cup at a time, stirring constantly to avoid lumps forming.

Continue cooking the mixture, stirring constantly, until the sauce has thickened and reached the desired consistency. This may take approximately 10-15 minutes. The sauce should coat the back of a spoon and have a smooth, silky consistency.

Once the béchamel has reached the desired consistency, remove the saucepan from the heat and season with salt, pepper and nutmeg to taste. Nutmeg is optional, but adds a distinctive flavor and pairs well with lasagna.
